Many areas of the western USA have limited or diminishing water supplies. Nonetheless, consumers expect drinking water to have a “pleasant” taste.  We have conducted taste-test studies to determine what triggers the perception of “pleasant” taste. We considered factors such as appearance (clarity/color), extent of dissolved minerals, and temperature, using water from various sources in the High Plans region of southwestern Kansas. We also examined whether residents understand the factors that influence their water-taste perception.<br/>
