Glycolipids (GLs) synthesized by microorganisms are useful biosurfactants currently used in niche-market products. Among these GLs, sophorolipids (SLs) produced by yeast are the furthest developed because of the high product yields. The primary use of SL is in the surfactant areas such as washing/cleaning and emulsion formulation. The value-added properties of SLs such as antimicrobial and taste sensory activities could further expand the application sphere of these biomaterials. An overview of the recent advances in the production and property characterization of SLs will be presented in this paper.
