Water soluble extracts of banana peel ashes have been used from times immemorial in some African communities to soften hard-to-cook foods. Some studies have found that those extracts contain bases in appreciable amounts. So far the soluble ashes have been determined by titration. In this study, the soluble peel ash extracts from several banana varieties were analyzed two ways:<br/>* Warder titration to determine simultaneously the amounts of hydroxides and carbonates in the extracts;<br/>* Treatment of the extracts with barium chloride to precipitate the carbonates, leaving the hydroxides in solution to be quantified by titration.<br/>The results of the study will be presented at the ACS Spring 2021 Virtual Meeting.
