Measurement of volatile and non-volatile components of teas are important for quality control purposes and a better understanding of health benefits from the consumption of tea products. Catechins and polyphenols are two classes of compounds with chemopreventive properties. In this work, several commercially available teas are analyzed using both Gas Chromatography Mass Spectrometry (GC-MS) and High-Performance Liquid Chromatography Mass Spectrometry (HPLC-MS). Tea samples are prepared using a water/ethanol mixture. These extracts are measured directly for HPLC analysis while Solid-Phase Microextraction (SPME) was used to extract compounds of interest for GC analysis. Chromatographic and mass spectrometric results are further examined using Parallel Factor Analysis (PARAFAC) along with other chemometric techniques to identify patterns and notable trends in the experimental data. It is the goal of this research to identify patterns without the need for standards or other reference data.
