In the past few decades, fluorescence-derived pedagogical tools have been gradually developed and introduced as a part of chemistry courses at university levels. However, due to the intricate conceptions, limited class time, and complex experimental procedures, students encountered several difficulties in understanding the concepts and linking the applications of fluorescence to their daily life scenarios. Therefore, developing approachable educational tools for helping students understand such perplexing knowledge remains a challenging goal for chemistry educators. Herein, we demonstrated the introduction of the excitation-emission matrix (EEM) fluorescence fingerprinting method and described its usage in monitoring the thermal treatment of various olive oils in an interdisciplinary approach. A speed-reading-based questionnaire survey was carried out on students to explore whether this method is acceptable for them to better understand the physical meaning of EEM and its relevance to their daily lives. Besides, the extensibility of the EEM fluorescence fingerprinting method were further evaluated by the students’ feedback to this survey.
