Bitter Kola (Garcinia kola) is a tropical plant which grows in moist forest. Its seeds are consumed and use for multiple functions. Garcinia kola is usually stored in banana leaves for preservation to keep it fresh in southwest Nigeria. When it is exposed to air, it’s usually become hardened and may not be easily broken or appealing for consumption. This study aimed at comparing fresh Garcinia kola with dried harden samples and to investigate its nutritive values. The proximate and phytochemical contents of fresh and dried samples; which were kept in different wrappers for 30days for air drying were determined by official standard methods of analysis. The results revealed that some component of proximate and phytochemicals were higher in dried than the fresh samples. The study has shown that the hard Garcinia kola can be consumed and not necessarily be discarded because it contains some nutrients and phytochemicals.
