The dairy products are widely used as sources of good quality dietary proteins. Recent increased consumer awareness regarding health benefits of dairy and in some cases specifically whey is keeping up their higher consumption in a wide age groups worldwide resulting in their high global demands. Dairy including whey are critical components not only  of infant and children nutritional formulas  but also adult and sports nutritional supplements. Milk and whey products/ingredients are sold in large volumes at relatively premium prices which make them prone to fraudulent activities. The authenticity verification of dairy ingredients based on their identity and purity tests can be very helpful to reduce the risk of their economically motivated adulteration (EMA). Studies were undertaken to develop a method to verify authenticity of milk and whey proteins by analysis of their amino acid composition. Authentic skim milk powder and whey protein samples were analyzed for their amino acids with and without spike with selected potential adulterants. The study objective is not only establishing the standard amino acid finger prints of the authentic skim milk powder and whey protein products but also to evaluate how their standard amino acid finger prints will deviate in the adulterated samples.
