A novel high internal phase Pickering emulsion (HIPPE) stabilized by nanoporous Zirconium metal-organic framework (Zr-MOF) was fabricated and charaterized. HIPPE was prepared by Zirconium (IV) chloride and benzene-1,4-dicarboxylic acid synthesized UiO-66. Three different Zr-based MOFs have been synthesized, i.e. UiO-66-100 (100 nm) and UiO-66-1000 (1000 nm), and UiO-66-NH3 (100 nm). PEG (20 kDa) was used as a depletant by one-step homogenization. Loading capacity (LC) of curcumin and physiochemical stability showed that this HIPPE had a significant advantage (α &lt; 0.05) compared with other delivery systems. The physicochemical properties of the MOF-HIPPE system were systematically characterized using a variety of methods, including computer simulation MOF structure, porosity and surface area analysis, crystal structure, morphology, dynamic light scattering, thermogravimetric analysis. Meanwhile, this study discussed possible mechanism based on the Derjaguin-Landau-Verwey-Overbeek (DLVO) model and depletion attraction for achieving processable MOF-HIPPEs. This technique is expected to be universally applied to other water-stable MOF particles, which can be used to stabilize emulsions with the help of polymers as depletants and generate novel nanoporous structures for many applications in food areas. <br/>
