Free radicals are unstable molecules that occur naturally in biological systems. Antioxidants play an important role in regulating free radicals and maintaining a healthy balance for cells to function. This fragile balance can easily be placed under oxidative stress with the influence of lifestyle and environmental factors. Studies have shown the presence of oxidative stress in many common diseases including but not limited to, cancer and inflammatory diseases. The importance of maintaining a healthy diet rich in sources of antioxidants to prevent common health ailments associated with oxidative stress has been well documented throughout the literature. The purpose of this study is to determine the antioxidant activity of varied, yet common dietary sources using the DPPH assay. The absorbances of DPPH stock solution at 517 nm and after 1h of incubation in the dark are measured. The determination of antioxidant capacity is performed by comparing the % inhibition of DPPH value obtained with % inhibition values of Trolox using a calibration curve and the results are expressed as μmol Trolox equivalents per mL of extract.The ability of certain dietary sources to suppress oxidation by mechanism of hydrogen atom transfer is promising for future investigations of dietary antioxidant’s role in reducing oxidative stress in biological systems to prevent diseases.
