A less hazardous, environmentally friendly, and energy efficient reaction performed using citrus juice has been designed and implemented within a sophomore level organic chemistry laboratory. The main learning objectives are to enable students to: (a) identify and understand various green chemistry principles such as atom economy, use of safer chemicals, design for energy efficiency, and inherently safer chemistry for accident prevention; and (b) use 1H NMR spectroscopic data to identify the synthesized imine products. Students have been successful in the green synthesis of Schiff bases that are otherwise expensive to procure commercially, and specifically react p-nitrobenzaldehyde and p-methoxyaniline at room temperature in the presence of different citrus juices as reaction media. In performing these reactions, students expand their knowledge on conjugation and how that creates more colorful products.
