The amount of citrus peel annually produced by citrus juice processors is enormous. Pectin is one of the major products that is produced from citrus peel. Pectin is a negatively charged polysaccharide with excellent emulsifying properties. In this research we formulated a citrus pectin/sodium alginate microencapsulated carvacrol and optimized the spray-drying conditions. The pectin/alginate encapsulated carvacrol can be used as a controlled-release sanitizer with high antioxidant capacity.
