Ovotransferrin (OVT), which accounts for about 12% of egg proteins, attracts more and more interests in recent years due to its excellent water solubility and numerous biological benefits. Currently, most of the OVT studies focus on extraction and structural characterization, and the use of OVT as the building block for nutraceutical delivery is still missing. In this talk, the assembly of OVT nanofibrils under different physicochemical conditions (pH, temperature, ionic strength, etc.) has been characterized by atomic force microscopy (AFM), which found that OVT fibrils consisted of both long and short fibrils. Circular dichroism results indicated that internal structure of OVT amyloid fibrils could be stacked b-sheet. Gastrointestinal digestion of OVT nanofibrils was characterized by thioflavin T (ThT) fluorescence and AFM. Most of OVT nanofibrils were disrupted during gastrointestinal digestion, but some OVT nanofibrils showed resistance to proteolytic digestion in vitro. OVT nanofibrils were also confirmed as effective Pickering stabilizers. We found that OVT fibrils could stabilize Pickering emulsions with high internal oil phase. The resulted Pickering emulsions can be used to encapsulate highly crystalline nutraceutical like hesperidin and improve its bioaccessibility.      <br/>
