There is an increasing global trend toward an environmentally reasonable consumption of renewable materials as sources of potential valuable chemicals for a truly sustainable society. Fruits of the Sambucus species, elderberries, show potential health benefits and have the highest total phenolic and anthocyanin contents. The direct disposal of these wastes into soil or landfills can cause serious environmental and ecological problems due to their low pH levels. The reuse of elderberries would remove the conservational concerns and hypothetically benefit in the limitation of synthetic ingredients in society. The berries contain many flavonoids – anthocyanins, quercetin, kaempferol, rutin, cyanidin 3-glucoside, cyanidin 3-sambubioside and hyperoside. The extraction of the elderberry plant was conducted by blending the berries and removed the solvents through rotary evaporator. Column chromatography separated the anthocyanins from the filtrates of the elderberry produced. The separated anthocyanins were analyzed through HPLC to determine which flavonoid compounds were extracted and the percentages obtained. The elderberry samples are analyzed using UV-Vis spectroscopy throughout each step of the procedure to determine if the separation of the anthocyanin product was indeed contained. The Kirby-Bauer disk diffraction was executed to measure the zone of inhibition to conclude the antibacterial properties of elderberries. If the results prove effective, the prospective outcome of this experiment would support environmental concerns and potentially assist a healthy environment by using more sustainable ingredients rather than synthetic.<br/>
