We have developed a general education laboratory course in Culinary Chemistry that combines lecture, demonstrations, in-class activities and laboratory components to introduce scientific principles, theories and methods within the framework of food preparation. Activities and demonstrations were designed to illustrate complex topics in a more familiar context that enable understanding at a sophisticated level. Laboratory activities utilized both the traditional chemical laboratory setting as well as a typical kitchen site. We will share our insights on the class and present our collection of laboratories and in-class activities as well as our efforts to assess the learning goals of the course.
