Fruit browning is one of the main causes of quality decay of fruit, so it can bring fair economical loss during the currency and preservation. This study focuses on the inhibitor that is expected to delay fruit's browning by inhibiting polyphenol oxidase (PPO). The docking abilities of the PPO inhibitors are calculated and trial sets are prepared by changing their ring size and the number and the position of the double bond in the ring. Results showed that the inhibitor of PPO tends to dock with PPO more stable when the inhibitor has six- or seven-membered ring and flat geometry.
