In this study, either vitamin K or Piroxican was encapsulated into oppositely charged ionic biopolymers including chitosan and kappa-carrageenan.  Tween 20 and whey protein isolates were used as emulsifiers for coating droplets of vitamin K or Piroxican using power ultrasound. The sizes of the particles were characterized using AFM, dynamic light scattering and FlowCam. Turbidity study suggested that in the presence of whey protein, coating was successful in both acidic and basic conditions. Furthermore, controlled-released of vitamins K and Piroxican was water activity-dependent. Optimal release of both compounds was found at water activities 0.662 and 0.769 corresponding to water plasticization of the glassy whey protein-chitosan kappa-carrageenan matrix. The model studied shows that a proper controlled of pH, temperature, and water activity could be useful for target delivery of lipophilic vitamins and drugs encapsulated into whey protein-chitosan- kappa-carrageenan matrix. The results of this study can have applications in the food and the pharmaceutical industries for development of emulsion systems as well as  encapsulation and controlled released of lipophilic bioactive compounds.
