Peanut proteins extracted from peanut meal were made into films using compression molding and casting using alkaline solutions. Peanut proteins could be compression molded into films using glycerol as plasticizer. The effect of film forming conditions and crosslinking on the tensile properties, thermal and water stability were investigated. Films obtained by solution casting were crosslinked with citric acid to improve tensile properties and water stability. Under the optimized conditions, compression molded peanut protein films had tensile strength of 5.8 MPa and elongation of 51.7% compared to 5.1 MPa and 77% for the solution cast films. The potential of using peanut protein films as substrates for tissue engineering was also studied using mouse fibroblasts.
