The toxicity of synthetic pigments limited their use in food industry and pharmaceutical industry. Therefore, more researches are focused on discovering nontoxic natural pigments to supersede synthetic pigments. Among the pigments, natural yellow pigment is the most difficult to obtain. Yellow pigments are water soluble and stable and they are the major constituents in peanut shell. Peanut shell is the shell of Arachis hypogaea L. Traditional methods of extracting yellow pigments from peanut shell include microwave extraction, ultrasound extraction, solvent extraction and supercritical fluid extraction. In this study, we compared the extraction yield of yellow pigments with the traditional methods. Based on the results, we developed an optimal method called solvent extraction under reduced pressure and this method can be used in industry for large scale extraction of yellow pigments.
