Recent reports have shown that the presence of compounds containing the o-diphenol functionality during ensilage of forages (either with naturally-occurring or in plants tranfected with polyphenoloxidase [PPO]) results in enhanced protein preservation of the stored forage. A recently isolated o-diphenol derivative, 1-O-methylchlorogenic acid, showed superior antioxidant properties to other o-diphenols of its class. Progress toward the synthesis of 1-O-methylchlorogenic acid is described.
