The aim of the present work was to study the survival of Bifidobacterium breve after microencapsulation using polymeric matrices made of high amylose starch (A), whey protein concentrate (CPS) and blends of both. The survival of the encapsulated microorganism was evaluated during their 28 day-storage at 4�C in yoghurt or after their exposure to simulated gastrointestinal conditions for 2 or 4 weeks of storage. Wall materials based on starch were phosphorylated by means of extrusion (ext), mixed with different ratios of CPS (Aext = 100% A, 90Aext = 90% A + 10% CPS and 75Aext = 75% A + 25% CPS) and by the conventional method (conv), in a slurry using sodium trimetaphosphate as the phosphorylating reagent. Encapsulated bacteria showed greater survival throughout their storage time in yoghurt than free cells and a similar trend was observed after their expose to simulated gastrointestinal conditions.
