In the brewing industry many recipes for new or improved beer styles start as a pilot batch. The scale up process is important for breweries of all sizes because new product development is necessary. However, several difficulties can occur when trying to scale up from gallon pilot batch size to a production brewing scale. Our current study will discuss the difficulties associated with scale up and pitfalls that can occur throughout the process. Covered topics will include brewery equipment, recipe changes, brewing procedure, brewery safety, and the finished beer in an effort to give a full understanding of the brewing process from grain to bottle and how it is affected by increasing the size and scale of the brewing operation.
