A well-known method of reducing blood glucose levels is to include cinnamon in the diet.  This research studied the interference of cinnamon in glucose testing.  Measuring glucose levels by the enzymatic method using glucose oxidase-peroxidase showed that cinnamon interfered and caused glucose levels to be reduced.  The enzymatic method of measuring glucose using hexokinase showed no interference.  Water-soluble components of cinnamon have been tested to identify which ones are responsible for the interference in the glucose-oxidase test.  Tannic acid caused a considerable reduction in glucose levels with the glucose-oxidase test.  The nature of this interference was investigated.
