Agave sap concentrate is considered a potential functional food, due to its anticancer, antidiabetic and antioxidant properties. In particular, it has been proven that antiproliferative effect on cancer cell lines increased with storage time. The purpose of this work was to evaluate the physicochemical changes occurring in concentrated agave sap during 48 weeks storage and correlate them with bioactivity. To achieve this, freshly produced samples were stored at controlled temperature and humidity during this period. Total soluble solids, pH, color, as well as total phenols and bioactivity were evaluated. Results indicate that storage caused a decrease in pH and soluble solids (?oBrix), as well as an increase in color intensity and antioxidant capacity. In conclusion, it can be established that 48 week storage produced significant changes in physicochemical, phytochemical and bioactivity properties of agave sap concentrate.
