We review recent experimental measurements of the forces, coupled to (for example, cryo-TEM) imaging of surfactant SUVs and MLVs interacting with each other and with various inorganic oxide or polymer surfaces, both with and without polyelectrolyte and surfactant (detergent) �additives� in the solution. These systems and their interactions are much more complex and subtle than those of traditional hard or elastic colloidal particles, and involve DLVO, hydration, hydrophobic, Coulombic and polymer-mediated interactions, as well as deformations, coalescence, slow structural rearrangements, various relaxation processes of charges (ion and water exchanges and diffusion through bilayers) and/or high MW polymers. Our results are relevant to understanding both biological and non-biological systems, the latter including vesicle suspensions, fabric softeners, shampoos, conditioners, creams, and food products.
