Recently, collagen derived from marine resources has a wide range of applications in cosmetic and food industries. Much less is known about the structure and property in sea cucumber collagens, however. The pepsin-solubilized collagen was extracted from the body wall of an edible sea cucumber, Cucumaria frondosa japonica, by a method involving disaggregation with �-mercaptoethanol, alkali treatment and limited pepsin digestion of collagen fibers. The SDS-PAGE and anion exchange chromatography showed that the major component of pepsin-solubilized collagen consisted of two different a chains, a1 and a2, which formed (a1)2a2 heterotrimers similar to the body wall collagen from Stichopus japonicas. And it was rich in a few amino acids such as glutamic acid when compared with other fibrillar collagens. Thus, these results suggest that the sea cucumber collagen may have suitable properties for use as food materials.
