Splenda� is one of a few artificial sweeteners that are advertised as zero calories and is ideal for individuals seeking to control their sugar intake. The ingredients of Splenda� are dextrose, maltodextrin and sucralose. Out of these three ingredients, sucralose is the only one that the body cannot metabolize hence making Splenda�a zero calorie sweetener. In order to confirm the manufacturer's claim, separation and characterization of sucralose must be performed. Maximization of the extracted yield of sucralose required solvent, temperature, and volume studies. This project serves as an example of the application of extraction and characterization of an organic compound in sophomore organic chemistry.
