The SAGES program at CWRU is a curriculum based on a seminar approach that combines writing, academic mentorship and civic engagement. Naturally Spicy is a SAGES course offered by the chemistry department that takes the students on a historic journey into the world of spices while examining the active chemical ingredients of many commercially and scientifically important spices. The students review scientific and popular articles to understand the chemical and biological relevance of spices by looking at the extraction processes and medicinal applications of the active ingredients. This classroom experience is augmented by a laboratory component where students use the various spices to delve into international cuisine. Through visits to botanical gardens, spice stores and local markets the course gives students an opportunity to learn the role of spice growth and trade in the local community. Students completing this course transition into global citizens having a broader perspective of the commercial aspects behind the ingredients in the food they consume, the chemistry behind the physiological effects of these ingredients and the communication of these aspects in scientific and popular journals.
