The objective of this study was to extract, isolate and analyze the antioxidant, resveratrol from various red and white wines. Three different companies of vineyards were chosen for the study.   The three vineyards include Gallo Family, Barefoot and Woodbridge.  Merlot from each vineyard was selected as the red wine and chardonnay was selected as the white wine.  The extraction and quantification of resveratrol was conducted in order to compare the amount of this antioxidant found in the different red and white wines. In order to extract resveratrol liquid-liquid phase techniques were implemented. The concentration of the antioxidant was quantified using ultraviolet/visible spectroscopy at a wavelength of 310 nm. High Performance Liquid Chromatography was also used to isolate and identify the active ingredient from each wine after extraction. The analysis of the data collected from this study will suggest which type of wine contained the most resveratrol.<br/>
