Anthocyanins are pigments that are associated with the bright coloration of flowers and fruits. These natural dyes belong to the flavonoid family, with their basic structure comprising of a fused flavylium ring. Oftentimes, sugars are attached attached to molecule, and the aglycone counterparts are called anthocyanidins.<br/><br/>We report the synthesis of new anthocyanidins based on a one-pot procedure providing high yields. The products were fully characterized and their antioxidant properties were examined using a modified ferric reducing activity of plasma (FRAP) assay. This undergraduate research was performed at a community college, and the challenges and achievements will be highlighted.
