A variety of nanocellulose-based coatings have been developed for fruits for preharvest, postharvest and processing applications. Several examples of this technology will be presented showing the effectiveness and novelty of this patented technology. These include prevention of rain cracking on sweet cherries, extension of shelf life for pears and a new canning process for blueberries. The science behind the coatings will be discussed and structure-property relationships presented.
