The self-assembled structures formed from natural surfactants and operationally defined lipids from soils are the core of the soil organic matter. In order to identify the type of interactions responsible for the formation of these structures a study was designed where the formation of these structures is controlled. Humic surfactants extracted from soils and model compounds that resemble the soil lipids like fatty acids and long chain hydrocarbons were brought together using a recent developed method to form self-assembled structures. These structures were analyzed by differential scanning calorimetry, solid-state NMR and IR spectroscopy. The results suggest that the mobility of alkyl chains of the lipids was affected by the interaction with the natural surfactants.
