An established experiment of liquid CO2 extraction has been expanded to extraction of natural products from spices and adapted to incorporate NMR into the undergraduate general chemistry laboratory. The first week of this two-week experiment involves the extraction of anethole from fennel seeds using liquid CO2. The second week includes analysis of the fennel extract by 1H NMR spectroscopy and thin layer chromatography.
