The chemotaxonomy of Poplar and Sourwood honey serves as baseline research in the expanding field of flavonoids and their health benefits. This was done 1) via separation and comparison of HPLC flavonoid retention times and UV-Vis spectra from honey samples with those of flavonoid standards, 2) via separation and collection of HPLC and UV-Vis fractions and 3) via silylation and GCMS analysis. These techniques were successfully tested for method validation and will be able to identify the presence of specific flavonoids in sourwood and poplar honey.
