Industrial use of enzymes could reduce the toxicity of the waste processing. Peroxidase can oxidize many different phenolic alcohols using hydrogen peroxide. The stability of a crude peroxidase extract from white turnips (Brassica rapa subsp. rapa) was investigated using a syringaldazine assay at temperatures between 20oC and 80oC. Assay modifications were made at low concentrations of calcium chloride and ethylene glycol. The assays were developed so measurements could be within 10% of the average activity (Abs/second at 530nm). Five activities were collected for each extract sample and the assays heated for 25 minutes. The enzyme had reliable activity below 60oC. Peroxidase activity was stabilized at higher temperatures when heated with calcium chloride. However, there was no reliable peroxidase activity in the presence of ethylene glycol below 40oC, even with calcium chloride also in solution.
