Stevia is an herb native to South America whose leaves contain sugar compounds called glycosides. Current methods of extraction include using organic solvents such as organic vodka which will draw out the glycosides over time. This project focused on creating a more efficient purification and extraction method for Stevia Rebaudiana leaves for a complete glycoside analysis. Initial extraction used an organic extraction, ethanol, as a control. To improve the efficiency, supercritical fluid extraction was employed. Analysis of the extract was performed using a method on HPLC with UV/Vis detection. A standard calibration curve was created using the glycoside, stevioside, which was then analyzed in the extracts from both methods. SFE extraction yields were compared to the traditional organic extraction in order to prove that the SFE method was more efficient at extracting an average amount of stevioside per extraction.
