Finding solutions to the global challenges we currently face requires the interdisciplinary work of scientists and engineers, especially in our shared mission to develop new materials to meet society’s evolving needs. Metal-organic materials have proven to be very versatile, with applications including gas storage, separations, biological applications and more. This talk will describe the research carried out in this area as part of the Fulbright Core teacher/scholar program in Peru. Emphasis will be placed on the use and application of metal-organic materials in natural polymers such as chitosan.  The challenges and opportunities of materials chemistry education and international collaborations will be further elaborated.<br/>
