In this talk I will review the composition of the protostellar gas observed  in regions of high-mass and low-mass star formation.  Catalytic reactions on grain surfaces can, in principle, lead to a large variety of  complex organic molecules and this has motivated many laboratory and theoretical studies.  Gas phase processes  may also build large species following ice mantle sublimation.  The relative importance of grain-surface chemistry and gas-phase chemistry will be discussed in the light of   recent of chemical models.
