The Nutrition Labeling and Education Act (NLEA) of 1990 provides the United States Food and Drug Administration (FDA) with specific authority to require nutrition labeling of most foods regulated by the Agency, and health claims to be consistent with agency regulations. FDA requires food manufacturers to list total fat, saturated fat and trans fat (i.e., trans fatty acids) on nutrition facts and some supplement facts panels. The declaration of monounsaturated fat and polyunsaturated fat (both defined as the cis isomers only) are required only when claims are made about fatty acids and cholesterol. The objective of the present study was to develop a rapid screening tool, using attenuated total reflection Fourier transform infrared (ATR-FTIR) spectroscopy in conjunction with partial least squares regression (PLSR) for the rapid prediction of fatty acid composition in marine oil dietary supplements and quantification of total trans fatty acids in edible oils and fats and fast food extracts. This simple, non-destructive, and rapid methodology has the potential to be used as an alternative to time-consuming chromatographic methods for screening of dietary fats in nutritional labeling.
