Pyrolysis of wood and other ligneous biomass is a complex degradation process for producing charcoal and tar accompanied by the release of volatiles. Various parameters like wood composition and structure, heating rate and residence time are affecting the overall yield and the composition of volatiles. Whereas slow degradation already occurs at lower temperatures, the actual pyrolysis of wood is typically initiated at 200<sup>o</sup>C and lasts to 450-500<sup>o</sup>C. During this process a complex series of reactions leads to the formation of typical volatiles, which are of specific interest for the flavor industry. Within this study we would like to describe the changing composition of the volatile fractions by means of selected marker compounds depending on the used biomass and applied temperature ranges.
