An effective and reliable method based on comprehensive two-dimensional gas chromatography/high resolution-time of flight mass spectrometry (GC×GC/HR-TOFMS) was established for qualitative and quantitative analyses of volatile compounds of a famous Chinese liquor (Chinese Baijiu), Laobaigan. Co-eluted chemicals were rapidly and effectively separated by a combination of polar × weak polar 2D GC columns. Furthermore, determination of accurate mass (AM) by TOFMS was used as a reliable qualitative method to identify volatiles with aid of the volatile standards and their retention index. A total of 395 compounds were tentatively identified from two kinds of Laobaigan Baijiu. Among them, 201 compounds were identified by accurate mass (AM), and 148 compounds were confirmed by authentic standards. In addition, 20 compounds were reported for the first time in Chinese Baijiu, including, 3-penten-2-ol, trans-2-methyl-2-butenal and 5-methyl-2-furfuryl alcohol, etc, and 70 volatiles were newly discovered in Laobaigan Baijiu and confirmed by 2D GC × GC/HR-TOFMS and authentic standards including, 3-methyltetrahydro-2-furanone, heptyl formate and 2-heptanol, etc. Moreover, a total of 24 aromas, based on their odor activity values (OAVs), were considered to be the aroma-impact volatiles that made remarkable contributors to the overall aroma profile of Laobaigan.
