Xanthohumol (Xn) is a hop flavonoid which can be derived from the hop flower (<i>Humulus lupulus</i>). Although hops are traditionally used in the beer brewing process to create flavor and for its antibacterial properties, only trace amounts of Xanthohumol can be found in beer. This is unfortunate because numerous studies have shown various health benefits of Xn, such as antioxidant, anti-microbial, and anti-inflammatory properties as well as the ability to decrease obesity and improve type-2 diabetes outcomes. Soxhlet extraction and High Performance Liquid Chromatography (HPLC) were used to identify which hop variety had the greatest amount of Xn and trends of Xn content between varieties were investigated. Data suggest that new world hop varieties have more Xn in them compared to most traditional varieties. By establishing which hop varieties can derive the most Xn, methods for optimal extraction could be developed, leading to a decreased cost of Xn production. This could make Xn a readily available natural consumer product.
