Alyson Mitchell is a Professor of Food Chemistry and the Master Advisor for the Food Science & Technology major at UC Davis. She is also the faculty co-director of the Food Safety and Measurement Facility and Honey and Pollination Center at UC Davis. She received her BS in Environmental Toxicology (1990) and PhD in Pharmacology and Toxicology at the University of California Davis (1996). Her PhD research focused on using mass spectrometry approaches to identify links between diet and cancer. To enhance her understanding of the relationship between food composition and health she pursued post-doctoral studies in Nutrition (1996-99). She was appointed an adjunct professor in the Department of Environmental Toxicology at UC Davis where she focused on characterizing volatile compounds. In 2000, she was appointed as an Assistant Professor in the Department of Food Science & Technology at UC Davis in 2000. Her research interests focus on elucidating chemical reactions and changes in composition that occur in fruits, vegetables and nuts as a result of plant breeding, pre- and post-harvest processes and for food authentication and safety. Dr. Mitchell enjoys mentoring undergraduate, graduate and post-graduate students from around the world and teaching courses such as The Chemical and Physical Analysis of Foods, Food Toxicology, and Food Folklore and Health.
