Following a 29-year distinguished career at Kraft Foods, Dr. Jane Leland is a taste, flavor and food R&D consultant to start-ups, non-profits, and corporations. As a touchpoint for discussion, the poster will highlight five of her international assignments with a focus on the African continent and the European Union: 1. Small scale soy processing in Tanzania to address malnutrition and strengthen the value chain for small holder farmers (USAID, Farmer to Farmer East Africa, Catholic Relief Services) 2. Sustainable extraction of natural flavors in Tanzania for Natural Extracts Incorporated Ltd 3. Research and development enabling a food company in Madagascar to enter the local chocolate market (United Nations Development Project) 4. Sustainable manufacture of nutritive food paste in Rwanda to treat acute childhood malnutrition (United Nations Development Project) 5. Transfer of a then-emerging aroma/flavor technology from Technical University of Munich for industrial application at a large global food corporation Research outcomes for each assignment will be shared, as well as the motivations, challenges, learnings, and rewards. Come learn about applying your knowledge and experience in totally new environments, developing your ability to solve basic food science challenges without familiar laboratory tools or infrastructure, and teaching adults specialized skills beyond their basic knowledge or education.
