One of the biggest current trends in tea consumption is to cold brew tea instead of doing a traditional hot brew. Depending on the type of tea, typical brewing temperatures for hot brewed tea are between 71°C and 100 °C. The steep time also varies for each type of tea, but typical times are 3-7 minutes. Although a standard method for cold brewing tea has not been accepted, typical brewing methods involve using four times the tea leaves compared to hot brew methods and the brew time is extended to twelve hours or greater. This project will explore the differences in concentration of caffeine in differently brewed tea samples using GC-FID. To remove the sample matrix a solid phase extraction method has been developed.
