Resveratrol, a naturally occurring polyphenol, has been widely reported for its health beneficial potentials. However, the applications of resveratrol in the food industries are quite limited because of its low chemical stability, low oral bioavailability, and poor water solubility. In this study, a series of delivery systems, including Pickering emulsions and nanoemulsions, were developed to compare their delivery efficacy and bioaccessibility of resveratrol using the Simulator of the Human Intestinal Microbial Ecosystem (SHIME) system. Zein/sodium caseinate (zein/SC) colloidal particles were utilized to fabricate Pickering emulsions through high speed homogenization, while traditional nanoemulsions were stabilized by lecithin using high pressure homogenization. And the loading capacity of resveratrol in these formulations was as high as 10 mg/ml, around 300 times higher than its water solubility. The optimum mass ratio of zein/SC was 10:3, which offered a good emulsification capacity to stabilize oils with various polarities. Results showed that the absorption of resveratrol in the SI was nanoemulsions&gt; Pickering emulsions&gt; bulk oil. Even though pepsin in the stomach caused agglomeration of zein/SC colloidal particles, which damaged the structure of the Pickering emulsions, droplets of Pickering emulsions were still observed after 2 hours digestion in stomach.The total amounts of resveratrol delivered by these three formulations were similar with each other, which may be due to short dialysis time using SHIME system.<br/>
