Interfacial structures including edges and defects have long been known to play a central role in chemical processes at interfaces, ranging from heterogeneous catalysis to crystallization. Nanostructured edges and defects have the potential to become even more powerful when utilized in nanoscale liquid environments. Here, we examine the consequences of electrospraying nanoscopic liquid droplets  onto  highly oriented pyrolytic graphite electrodes templated with molecular scale chemical functional patterns. The patterns, based on lying-down striped phases of long-chain fatty acids and phospholipids, display 1-nm-wide functional stripes of headgroups separated by ~ 5 nm stripes of lying-down alkyl chains. Such noncovalently adsorbed monolayers blend ordering and flexibility potentially useful in controlling reactions and molecular assembly near interfaces. Additionally, phospholipids have a headgroup architecture which facilitates polar-nonpolar environmental transitions at nanometer scales, suggesting the ability to design custom reaction environments at interfaces . Combining nanoelectrospray with scanning probe measurements enables us to examine morphology and physical properties of individual droplets and nanostructures created using this approach.<br/>
