Catechins are most abundant bioactive compounds in teas.  It is well-known that tea catechins possess several common biological and chemical properties related to antioxidation, free radical trapping as well as modulation of cellular antioxidative enzyme activities. It appears that tea catechins may protect against cardiovascular diseases, neurodegenerative disorders and many forms of cancer. The most important structural moieties of tea catechins responsible for their antioxidation actions are those phenolic groups on the B-ring of catechins. Recently it has been observed that tea catechins are able to directly trap the reactive carbonyl species, such as methylglyoxal, glyoxal, and acrolein. Those reactive carbonyl species have been associated with certain diseases such as diabetes and other age-related diseases. We will discuss this novel mechanism of action for tea catechin and the structural moieties responsible for this action.<br/>
