From the perspective of food safety, free and fatty acid ester-bound Monochloropropanediol (MCPD) as well as glycidol in its ester-bound forms are known to be undesired food-borne contaminants that occur frequently in a large variety of foods. Due to their molecular structures, either containing organically bound chlorine or bearing a reactive epoxy-group, the core components might cause adverse health effects when being metabolized after digestion. The International Agency for Research on Cancer (IARC) has classified 3-MCPD as possibly carcinogenic to humans (category 2B) and glycidol as probably carcinogenic to humans (category 2A). As toxicological studies have shown that 3-MCPD and glycidol are released out of their ester-bound form in the gastrointestinal tract, the European Commission recently has defined maximum levels of glycidyl fatty acid esters in certain foods such as vegetable oils and fats but also infant & follow-on formula and other foods for infants and young children. This regulation will come into force by 19 September 2018 even though officially validated analytical methods for the ester-bound analytes are available so far only for oils and fats. This lecture focuses on method development in purpose to meet the upcoming but also future regulation specifications. At the same time, it was intended to establish a rugged, technically non-sophisticated routine application that is suitable to a broad range of food matrices with special regard to infant formula.<br/>
