Current global food security challenges must address improved nutritional quality of foods to find solutions to rapidly emerging challenges of non-communicable chronic diseases (NCD) such as type 2 diabetes and its complications towards cardiovascular disease. This will require metabolic innovations that can be integrated into food production and processing where healthy ingredients and bioactive whole foods to counter NCD can be formulated. Among metabolic innovations the conceptual foundation in redox biology is essential to counter oxidation-linked malfunctions associated NCD such as type 2 diabetes and its complications. Further bioactive enriched bioprocessing by targeted microbiome can be used to both improve health relevant nutritional quality and enhance processing and preservation of prepared foods. Metabolic innovations based on understanding of redox biology have been used to screen food crops systems for bioactives that can target different stages of type 2 diabetes and complications associated with oxidative breakdown such as microvascular complications. Further the matrix of such redox modulated foods can be excellent substrates for biotransformation by dual functions relevant microbial systems or targeted microbiomes that improve the bioactive food ingredient targets and also additionally be of value as beneficial probiotic bacteria. Using the rationale of redox biology and microbiome-based processing health targeted functional foods can be designed from agronomic stages to post-harvest processing to final stages of ready to eat consumption. Such integrated approaches based on metabolic control points that affect food crop production to human health are essential for more logical health relevant design of functional foods.
