The age of vinegar has a very important influence on the quality of Zhenjiang aromatic vinegar, in order to establish a method for discriminating different ages of Zhenjiang aromatic vinegar quickly and accurately, we used the odour activity value (OAV) of odour active compounds and chemometrics methods to discriminate Zhenjiang aromatic vinegar with different ages, based on GC-Olfactometry to determine the odour active compounds .The results showed that the use of odour active compounds and its OAV in combination with linear discriminant analysis(LDA) can clearly characterize the differences and linkages between different ages of Zhenjiang aromatic vinegar.The recognition rate of Zhenjiang aromatic vinegar with different ages was 100%.
